Pistachio gelato is non-negotiable on my menu. This paste is made from nearly 100% Mediterranean pistachios and you can taste it — nutty, aromatic, beautiful pale green colour. It's not cheap, but cheap pistachio paste tastes like almond extract and food colouring. This is the one ingredient I refuse to compromise on.
