Gelato is defined less by where it comes from and more by its composition — the balance of milk, sugar and fat, how much air is whipped into it, and the temperature it's served at. Understanding these fundamentals is what separates a café that sells a decent scoop from one that serves gelato people travel for. The composition of gelato
Good gelato is a balancing act. The classic Italian approach thinks in terms of a "balanced mix" where solids and water are in the right proportion so the finished product is neither icy nor greasy. Here are the components that matter.
Milk and dairy solids
Milk is the backbone of most gelato. It brings water, milk proteins and milk sugar (lactose), plus a little fat. The non-fat milk solids — proteins and lactose — are quietly important: they help hold structure, trap water so it can't form large ice crystals, and give the mix body. Whole milk with a modest amount of cream is the typical base for a "white" gelato; the exact ratio depends on how rich you want the finished scoop.
Sugars
Sugar does far more than sweeten. It controls how hard the gelato freezes. Sugars lower the freezing point of the mix, so a well-sugared gelato stays scoopable straight from the display rather than setting rock-hard. Professionals often blend sugars — sucrose plus dextrose or invert sugar — to fine-tune sweetness and firmness independently. Too little sugar and the gelato freezes hard and icy; too much and it never firms up properly and tastes cloying.
Fats
Here is one of the defining differences between gelato and ice cream: gelato carries less fat, usually in the region of 4–8%, where ice cream often sits well above that. Lower fat means the flavour hits your palate more directly, because fat coats the tongue and mutes taste. It also means gelato relies more on its other solids and on stabilisers to stay smooth, since fat is one of the things that keeps ice cream creamy.
Stabilisers and bases
Stabilisers are small amounts of ingredients that manage water and keep texture smooth over the life of the batch — limiting ice crystal growth, improving mouthfeel and helping the gelato survive display and storage without turning grainy. Overrun: why gelato is denser
"Overrun" is the industry term for how much air is whipped into a frozen dessert during churning. It's the single biggest textural difference between gelato and ice cream.
Industrial ice cream can carry 50% or more overrun — half the volume of the tub is essentially air, which is why a large scoop can feel light and melt quickly. Gelato is churned slowly and deliberately incorporates far less air, typically around 20–35% overrun. Less air means more actual dessert per spoonful: denser, silkier, and with flavour that reads as more concentrated because it isn't diluted by bubbles. When you weigh a litre of gelato against a litre of ice cream, the gelato is noticeably heavier — that's the overrun difference you can feel.
Serving temperature
The final lever is temperature, and it's the one most often overlooked. Gelato is served warmer than ice cream — commonly around –12°C to –14°C, versus roughly –18°C for ice cream. That warmer serving point is only possible because of the composition choices above (particularly the sugar balance and lower fat), and it's what gives gelato its signature soft, elastic, almost stretchy scoop. Serve gelato too cold and you lose the texture and mute the flavour; hold it too warm and it slumps and won't hold a clean scoop. How gelato is made: the basic steps
The production flow is straightforward in outline, even though each step rewards precision.
Weigh and balance the mix. Combine milk, cream, sugars, any milk powder, and your base or stabiliser according to a balanced recipe. Weighing — not eyeballing — is what makes batches repeatable.
Pasteurise and blend. Heat the mix to pasteurise it and to fully dissolve and hydrate the sugars and stabilisers. This is where a hot-process base does its work.
Age the mix. Rest the mix cold (often several hours). Ageing lets the proteins and stabilisers hydrate fully, which improves body and whipping quality.
Add flavour. Fold in your flavouring — a fruit purée, a paste, or a natural extract. A concentrated paste such as pistachio paste is a common way to deliver clean, intense flavour without unbalancing the mix.
Churn (freeze). Freeze in a batch freeze while churning slowly, keeping overrun low. The mix goes from liquid to soft gelato in minutes.
Blast and store, or display. Either blast-freeze for storage or transfer to the display at serving temperature. Keep display time short for best texture.

Frequently asked questions
Is gelato just Italian ice cream?
