As part of our commitment to advancing gelato craftsmanship in the region, we organised a specialised masterclass led by Chef Domenico, an accomplished Italian gelato expert with deep industry experience. This project aimed to introduce professional techniques, authentic formulation principles, and hands-on learning to chefs, entrepreneurs, and culinary teams seeking to elevate their gelato knowledge.
The masterclass combined structured theory with practical demonstrations, giving participants a clear understanding of ingredient science, balancing formulas, stabiliser behaviour, and the differences between true Italian gelato and commercial ice cream. Chef Domenico guided attendees through the full production workflow—from base preparation and flavour construction to churning, texturising, and storage methods—ensuring a comprehensive learning experience.
Participants engaged directly in recipe development and production practice, working with both classic Italian flavours and innovative modern profiles. The session provided opportunities for troubleshooting, sensory evaluation, and adapting recipes to different business needs, allowing each attendee to walk away with actionable skills and greater confidence.
This project successfully delivered high-value professional training, strengthened community interest in artisanal gelato, and provided attendees with the knowledge required to implement authentic techniques in their own operations. The masterclass stands as a showcase of our ability to bring industry-leading expertise to local culinary audiences and support the growth of gelato excellence across the region.
